Oatie Christmas Cookies

I spent yesterday evening baking oatie cookies. They tasted so good, I decided to share the recipe here.


* 115g (4oz) plain flour  * 1/2 tsp baking powder  * 1/2 tsp ground cinnamon * 1/4 tsp salt * 150g (5 1/2 oz) raisins * 165g (6oz) rolled oats

* 125g (4 1/2oz) light brown sugar * 115g butter  * 1 vanilla pod * 1 egg


To bake cookies (makes about 20) :

Preheat the oven to 180 degrees C/gas mark 4. Spoon the sugar into a mixing bowl with softened butter. Split the vanilla pod, scrape the seeds, add them to the bowl, then beat it all with an electric mixer until pale and fluffy. Mix in an egg. Add the remaining ingredients and combine until smooth. Refrigerate for half an hour, then transfer tablespoons of it to a lined baking sheet. Flatten slightly, leaving room for them to spread.

Bake for 10-12 minutes, until golden at the edges but soft in the middle. Leave on the baking sheet for five minutes before transferring to a rack to cool.


Variations can include:  adding 2 tsp of cinnamon and a tablespoon of honey into the mixture. Brush honey on the top of cookie before placing it in the oven. Or replace the raisins with Cranberries, reduce the rolled oats to 150g, and add 15g of flaked almonds instead. Or replace the vanilla pod with another flavour of your choice.
